It certainly is possible that the course of the Anduin River could have changed course over those 2500 years (especially the portion of the Anduin where the One Ring was lost), but from all appearances, Smeagol and Deagol were fishing in either a pond or a small lake. I suppose it was easier and safer to film this flashback scene with Smeagol and Deagol on a pond or a small lake, since many of New Zealand's rivers have dangerous fast-moving currents.
